In January you may have seen me on Channel 4’s Come Dine With Me programme, where hosts compete to put on a superlative dining experience for their guests. I served a delicious sugar-smart dessert, Key Lime Pie Surprise. What’s the surprise? Read on…
It was a pretty daring strategy, serving a sugar and gluten free menu. But because of my work as an Eating Psychology Coach, I was determined to show my diners and the viewers that healthy, sugar-smart food can also be delicious and feel like a treat.
My shining star of my menu on the show was Key Lime Pie Surprise for dessert. I served it with blueberry jus and cashew cream, a diary-free alternative to cream or ice cream we usually expect with desserts. But the main “surprise” is the pie is made from avocado rather than dairy products. The fabulous lime green colour contrasts with the bright purple berry sauce and white cashew cream, and the crunchy base – which nobody can believe doesn’t contain any biscuits or some other kind of flour/sugar combo!
Let’s compare this to what we would normally find in a supermarket–bought key lime pie.
Gu’s Key Lime Pie ingredients are:
Whipping Cream (22%), Sugar, Biscuit Crumb (Wheat Flour (Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin), Wholemeal Flour (Wheat), Vegetable Oil (Rapeseed Oil, Palm Oil), Sugar, Sugar Syrup, Raising Agents (Sodium Bicarbonate, Ammonium Bicarbonate), Salt), Mascarpone Cheese (11%) (Cream, Milk Protein Powder, Acidity Regulator (Citric Acid)), Full Fat Soft Cheese (11%) (Cream, Water, Milk Protein Powder, Modified Starch, Culture, Sea Salt, Preservative (Potassium Sorbate)), Unsalted Butter, Lime Juice (7%), Pasteurised Whole Egg, Ginger Palm Sugar (4%) (Palm Sugar, Ginger), Vegetable Oil (Rapeseed Oil, Palm Oil), Demerara Sugar, Pasteurised Egg Yolk, Water, Beef Gelatine, Stabiliser (Modified Maize Starch), Preservative (Potassium Sorbate), Acidity Regulator (Citric Acid)
So, looking at the ingredients, you can see that it’s high in sugar and wheat, contains various additives and also contains beef gelatine, so it’s not vegetarian, as well as various stabilisers and preservatives.
It also contains palm oil, the production of which is devastating the rainforests – so by refusing to buy this kind of sugary processed ‘food related product’, you can do your bit to help the rainforest habitat of the Orangutans too.
Here’s my Key Lime Pie Surprise ingredients:
Avocados, Lime juice, Honey, Pitted dates, Coconut oil, Pecans, Cacao nibs, Desiccated coconut, Lime zest.
My recipe has lots of healthy avocados and lime juice, contains just enough honey to counteract the tartness of the juice, and no more, and protein from the nuts.
